2 cups nonfat ricotta cheese
1 1/4 cups pumpkin puree
1/2 cup low-cal maple syrup
8 packets Equal
1 tsp Vanilla
1 1/2 tsp. Pumpkin Pie Spice
1/3 c vanilla protein powder
1 low-fat graham cracker crust
light whipped topping
Preheat oven to 400 degrees. Mix first seven ingredients. Pour into crust and bake about 40 minutes. Serve with a dollop of whipped topping. Yield: 6 servings
