Copied verbatim from The Complete Cooking Light Cookbook so I hope they don't sue me. 2 (3/4 lb) pork tenderloins
Cooking spray 2 teaspoons stick margarine or butter (I ignore this) 2 cups sliced onions 1/2 teaspoon dried thyme 1/2 teaspoon salt 1/4 teaspoon pepper 1. Preheat over to 400 2. Trim fat from
pork; cut a lengthwise slit down center of each tenderloin, cutting about two-thirds of the way through meat. Place on a broiler pan coated with cooking spray. 3. Melt margarine in a large nonstick skillet over
medium-high heat. Add onion, and saute 5 to 6 minutes or until tender. Add thyme, salt, and pepper. Spread onion mixture evenly into cut tenderloinds and over tunderloinds. Bake at 400 for 45 minutes until meat
thermometer registers 160 (slightly pink) Yield: 6 servings (serving size 3 oz) Nutritional Information: Calories: 168 Protein: 25g Carbs: 3.4g
Fat: 5.5 (less if you don't use so much butter to cook the onions). |
